During a series of hands-on masterclasses, our students had a unique opportunity to immerse themselves in the atmosphere of Italian cuisine and master the professional nuances of the craft.

The Dough: The Foundation of Excellence The main secret of Italian pizza begins with the dough. Participants learned about the specifics of using type “00” soft wheat flour, long fermentation processes, and precise temperature control. Students saw firsthand how the correct dough texture affects the lightness and crunch of the final product.

Aesthetics and Balance of Ingredients Special attention was paid to the pairing of components. Students studied classic Italian canons: from the minimalist “Margherita” to more complex flavor profiles. We explored how the sweetness of San Marzano tomatoes harmonizes with the delicacy of mozzarella and the freshness of basil, and why in the Italian tradition, fewer ingredients often result in a superior quality of taste.

Comparative Analysis and Tasting The most engaging stage was the tasting and comparative analysis. Thanks to this series of masterclasses, future interns were able to clearly distinguish the differences between local pizza variations and the Italian original.
